Indian Baked Samosas

1 large potato (about 1/2 a pound, use 2 if needed)
1 Tbs olive oil
1 medium apple
½ cup golden raisins, coarsely chopped
1 tsp curry powder
1/2 tsp cinnamon
1/2 cup frozen peas, thawed
1 package (2 9-inch rounds) store-bought, raw pie dough
1 egg, beaten with a splash of water

Preheat oven to 350.

Using a fork, poke holes on all sides of the potato. Microwave for about 8 minutes or until cooked though. Let cool. Chop into 1/2 inch cubes.

Place chopped potato in a large bowl.  Add olive oil, apple, raisins, curry powder, cinnamon, and peas.  Mix well to mash up the potato a bit.

Place one round of dough on a lightly floured surface. Cut into 8 wedges, like a pie. To form the samosas, place a 2 teaspoon-sized ball of filling on the center of one wedge. Bring up the corners and seal the edges to form a pyramid shape. Brush each samosa with the egg wash.

Place on a prepared cookie sheet, and bake about 20 minutes, or until golden brown. Serve with yogurt dipping sauce, if desired.

Yield:  16 samosas
