Broccoli Bites

These little finger foods are great with a variety of dipping sauces, such as ketchup, ranch dressing, and honey mustard.
Yield:  About 36 Bites

Ingredients: 
1 lb broccoli (fresh or frozen), chopped
1 cup cheddar cheese, shredded
1/2 cup Parmesan cheese, shredded
3 eggs, beaten
1 cup flour
1 tsp. Italian seasoning
Salt & pepper to taste

Directions:

  1. Preheat oven to 375. Mix all ingredients together in a bowl.
  2. Use your hands to roll the mixture into 1 inch, bite-sized balls. Place balls on lightly greased parchment paper.
  3. Bake for 25-30 minutes, or until brown.

Notes:
The baked bites freeze well.  Simplly thaw and re-heat in the microwave for a quick lunch.
