Creamy Broccoli Soup

Fresh or frozen broccoli work equally well in this rich, satisfying soup.
Serves 4

6 cups small broccoli florets
2 cups chicken broth
1/2 cup chopped onion
1 Tbsp. powdered ranch dressing mix
1/2 cup milk
1/2 Tbsp. lemon juice
1/4 cup sour cream or Greek yogurt


  1. Combine broccoli, broth, and onion in a large saucepan.  Bring to a boil.  Cover and simmer about 15 minutes.  Stir in ranch mix.
  2. Puree until creamy, using either a hand blender.  Or, if using a conventional blender, divide the soup into two batches.
  3. Return to a low heat.  Add milk and lemon juice.
  4. Ladle into bowls, and garnish each with a dollop of sour cream or yogurt.
Instead of sour cream or yogurt, shredded cheese or crumbled bacon would also be delicious.
