Crunchy Roasted Chickpeas

Also known as garbanzo beans, these little legumes pack a nutritional punch.  High in fiber and protein, they make a filling snack on-the-go.

Crunchy Roasted Chickpeas

2 15-oz. cans chickpeas, rinsed and drained
3 Tbsp. olive oil
3 Tbsp. sugar
3 tsp. salt


  1. Preheat oven to 425.
  2. Pat chickpeas dry with paper towels.
  3. Spray a large cookie sheet with cooking spray.  Spread chickpeas in a single layer.
  4. Drizzle with olive oil, and then sprinkle with sugar and salt.  Mix them around a bit on the cookie sheet with a large spoon or spatula so that they are evenly coated.
  5. Roast 25-35 minutes, stirring every 10 minutes.
  6. When they are a deep golden brown and crunchy, remove from oven and allow to cool 5 minutes before serving.  (I’ve never been able to do that last bit).
