Apple Cinnamon Granola

This granola is great with milk for breakfast, or also dry  – as a snack to take along.

Apple Cinnamon Granola


  • 2 eggs
  • 1 Tbsp canola oil
  • ¼ cup brown sugar
  • 1 tsp ground cinnamon
  • 2 tsp baking powder
  • 3 cups old-fashioned rolled oats
  • ¾ cup dried chopped dried apple pieces
  • ½ cup chopped walnuts or pecans (optional)


  1. Preheat oven to 350.
  2. Spray a large, rimmed cookie sheet with cooking spray and set aside.
  3. In a large bowl, beat together the eggs, oil, brown sugar, cinnamon, and baking powder.  Mix in the oats.
  4. Spread oat mixture, in a thin, even layer, onto the prepared sheet.  Bake for about 30 minutes, until edges are lightly browned and crispy.
  5. Let cool completely.  Break into chunks, and toss with the dried apples and nuts, if using.
  6. Enjoy!
